Ingredients:
Cucumber Open Sandwich:
- 4 slices of white bread
- Half a cucumber
- 2 ounces of regular cream cheese
- 5 sprigs of chives
- Dill (for garnish)

Prosciutto and Melon Open Sandwich:
- 4 slices of white bread
- 1/3 cup of kalamata olives pitted
- 1 tablespoon of extra virgin olive oil
- 1/4 of a rock melon or cantaloupe

Start by cutting your bread into your preferred shape. For a fun and elegant touch, I used a 2cm/2in circular cookie cutter, which yields 3-4 pieces per slice. Alternatively, you can trim the crust and cut the bread diagonally into triangles for a classic look. Tip: Bread can dry out quickly, so be sure to cover your slices with a damp cloth while prepping the fillings to keep them fresh.
Cucumber Sandwiches with Chive Cream Cheese

Prepare the Chive Cream Cheese:
Finely chop fresh chives and mix them into cream cheese with a pinch of salt and pepper for a creamy, flavorful spread. -
Slice the Cucumber:
Thinly slice cucumber lengthwise into delicate, crisp pieces. -
